Hi, I’m Nicole, the head baker and recipe developer for our baked goods here at West Coast Fresh Food. Baking isn’t just my career, it’s a decade-long obsession with the perfect crumb and the finest ingredients. As a Red Seal Certified baker, I’ve spent years honing the technical science of the kitchen. Whether I’m crafting a French Macaron, or a complex lamination of a buttery croissant, to a simple nostalgic loaf of white bread, every recipe I develop is done with honest philosophy using natural ingredients and no artificial additives. My goal is always the same, to provide total quality without shortcuts.

Baking has long been a passion of mine since childhood, long before it became a profession. Inspired by a lifelong love of cooking and creating in the kitchen, I began my professional baking career in 2012. With such a deep rooted passion for baking, it was only natural for me to become a baker and bring that love to the industry.

Originally from Ukraine, I have always found joy and connection through food. Now in my third year in Canada, I’ve spent the past two years working with West Coast Fresh Food, where I bring passion, care, and creativity into everything I prepare.I also love gardening–even something as simple as growing green onions in a small jar on the kitchen counter brings me happiness. For me, cooking is more than a job; it’s a way to share warmth and comfort. No matter what I’m cooking, the main ingredient is love!
